About 10 years ago I went in for a routine Dot Physical and only to fine I was about to either have a major Heart Attack or a possible Stroke due to Hypertension and I didn't even have a clue, never had a problem with Blood Pressure before, felt fine. High Blood Pressure is known for being a Silent Killer. Please, Please,Please don't be found on the side of the road like one of the people that inspired me to be a Trucker, My Mentor, My Friend and the closest thing to being a Dad after my Father died from a Heart Attack at the young age of 49. There is a quiet, almost invisible, epidemic plaguing America's truckers. According to studies, truckers suffer from all of the problems bothering the American public...Type II diabetes, heart disease, hypertension, etc...just more so. Because of this, way too many drivers go permanently 10-7(Die) before their time! It's all about the lifestyle. You're faced with poor diets, no exercise, fatigue, and stress. Driving hour limitations and regulations force unusual sleep patterns adding to stress and fatigue. On top of that, your food choices are limited by truck stop restaurants, life in the sleeper for days or weeks at a time, and loss of family and social contacts while on the road. Add to that the strain of constant long distance traveling, and many may seek comfort in food. Pam Whitfield and Don Jacobson want to help you change. Take charge of your meals...and take charge of your life... with Road Cookin'...a community dedicated to helping truckers eat smart. See What they have on recipes and start Living Healthy Today. Here is one of the Recipes. Crock-Pot® Spice Rubbed Pork Roast with Sweet Potatoes Yield: about 4-5 servings
1 tb ground cumin 1 tb chili powder 2 tsp ground coriander 1 tsp ground cinnamon 1 tsp brown sugar 1 tsp salt 1 tsp ground black pepper 2 garlic cloves, minced 1 3 pound boneless pork loin roast 3-4 c sweet potatoes, chopped ½ c unsweetened apple sauce
1. In a small bowl, combine the cumin, chili powder, coriander, cinnamon, sugar, salt, pepper, and garlic. Stir to combine ingredients and rub all over the pork roast. 2. Place the potatoes in the bottom of the Crock-Pot® slow cooker and cover with the apple sauce. Lay the roast over all, cover, and cook on Low for 6-8 hours or on High for 3-4 hours until roast is cooked through. Remove the roast and let stand 10-15 minutes before carving. 3. When using electrical appliances, basic safety precautions should always be followed. Follow the use and cleaning instructions supplied with the product by the manufacturer. Electrical appliances should be used in the sleeper berth only and should not be used while vehicle is in motion
